The AMBRE Project is a collaboration between the European Southern Observatory (ESO) and the Observatoire de la Cote d’Azur to determine the stellar atmospheric parameters for archived spectra from ESO spectrographs. In this paper the 51,921 UVES archived slit-spectra taken with standard setups in the ESO/UVES archive for the period from 2000 to 2010 are processed. The AMBRE analysis pipeline integrates spectral normalization, cleaning and radial velocity correction procedures and automatically selects and determines stellar atmospheric parameters for FGKM stars using the MATISSE algorithm. Radial velocities are reported for 36,881 (71%) of the analysed archive spectra. The rest of the spectra had either too-low signal-to-noise, spectral features too broad for analysis, binary star signatures, or technical issues from the reduction. Stellar atmospheric parameters were measured for 12,403 spectra, which accounts for 24% of the sample or 3,708 individual FGKM stars. Metallicities, and alpha-element to iron abundance ratios are provided for 10,212 of these spectra. The results of the data reduction and analysis will be available in the ESO archive.
